Creamy Cantonese Three Egg Congee 三皇蛋肉碎粥

Here is another dim sum style congee recipe which has a thick and sticky texture to the porridge with some twist to the preparation and ingredients, innovated by my mom creatively. This time round, she uses a rice cooker instead of the pressure cooker.

You might find the century eggs unbearable to eat or even smell, but for Cantonese girl like me… i just LOVE LOVE LOVE the century eggs. I always have them on its own with some pickled ginger, steamed egg dishes and sometimes soup.

3 EGGS
3 century eggs
2 salted eggs
1 chicken egg

Marinate for Rice
2 cup – rice
1 teaspoon – pork lard
1 teaspoon – salt

~

Marinate for Minced Pork Meat (can replace with chicken)
500gram – minced pork meat / pork belly or BOTH
3 slices ginger
1 tablespoon – soy sauce
1 tablespoon – tapioca starch flour
2 pinch – sugar
1 tablespoon – cooking oil (put last, so that the oil would lock the moist)

4 pandan leaves
2.1L of hot boiling water

Garnishing (Optional)
1 stalk spring onion – chopped
White pepper
Soy sauce
Sesame seeds oil
Roasted sesame seeds
